In my view there is a vast difference in taste between a chicken which has spent its life roaming the outdoors and a chicken reared in a shed.

Both are generally available here though the former usually costs more than the latter which is often called "pollo economico."

You also meet a third variety... hens which were past their best at egg laying. In country places, these are amazingly cheap (15 to 20 pesos each) but require a lot of cooking to make them edible.

I've sampled excellent chicken all over the ROU but the best I've met are served in the two restaurants on the main square at Minas.

I love Uruguayan free range roasted and/or barbecued chicken!!! As far as I'm concerned, the taste is vastly superior to the massively produced, chemically-injected, variety.

Patrick - I think that old hen is called Gallina and is past their prime.

I'm not a Cook but I think it's better to make soup with. HAHA

I find them both tasty and economical if you cook them for a long time to soften them up before chopping them small, adding a sauce and baking them in a pie... though they are also ideal for soup.
